I was watching Paula Deen and her son Jamie Deen on the Food Channel -- as I worked on this issue of the Gazette -- and almost gagged on their recipe for Catfish Tacos. Catfish is all by itself a very fatty fish, but then they proceeded to cut it into thin strips, coat them in flour, and deep fry it all in a big kettle of oil.

The rest of the taco ingredients seemed healthy and included thinly sliced radishes, red onion, black beans, corn, and angel hair coleslaw -- but I couldn't get past the grease of the fish. Watching them eat the conglomeration was a show by itself. As the Food Stars chomped into the overflowing crispy taco shells, the ingredients fell out all over the place. Regular beef tacos are messy too, but at least they don't drip with grease -- at least mine don't. I use lean beef and crushed taco chips.

In any case, I'm hooked on watching Paula Deen whenever I flip into her kitchen. She makes me laugh, even when I'm writing on the Victoria City Budget.

I'm also hooked on hiding a fishhook in each and every issue of the Victoria Gazette. You could catch a small catfish on the Gazette's hook if you could ever scrape it off the newspaper. Last month (in the September issue), the fishhook was dangling around the "S" on the BERTAS funeral ad. When I dove into the minnow bucket, I pulled out Angela Rosenberg of Mound to win the $10 drawing. Congratulations, Angela!
