Speaking of my salmon recipe in the feature story of this Christmas issue of the Gazette, I should tell you that I often go off on my own with a made-up recipe that is really just as good and certainly much easier to make and it has much fewer calories.

I often broil a large filet of salmon for dinner, sprinkled with just the right seasoning and barely brushed with butter to give it a nice crispy crust.  Well, sometimes there is a piece left over, which I smash together with a little Hellman's Light Mayo and a  smattering of finely chopped red onion.  It's delicious on a cracker, topped with capers.

Did you see the big hook on page 41 in the shoulder of Clarence Kelzer last month?  Janie Jasin didn't know it was there either, but some of you did.  And when I dipped into the minnow bucket, I pulled out Bob Castellano, the accountant tax man from Excelsior.  Congratulations, Bob, on winning the Christmas drawing.  Your ten dollars will be in the mail more shortly than longly.

There's another fishhook hidden in this issue of the Gazette.  If you find it, write or email Sue@VictoriaGazette.com to be included in the drawing.  In the meantime, Merry Christmas to all hook line & sinkers.
