Dirt Dessert I'm not positive where this old recipe comes from; I think my mother. More than likely my mother. I have no idea what the original name is, but it looks like garden dirt so that's what we came to call it. I've been known to use a flowerpot as the serving dish and a dirt digger as the serving utensil. It doesn't sit well on a table with china and silver, but works great with casual tableware.
32 Hydrox cookies 12 large marshmallows ¾ pound of dates (pitted, of course) ¾ cup water ½ cup chopped walnuts 1 pint whipping cream, whipped
Roll or crush the cookies into crumbs. Place half the crumbs in the bottom of a 9" x 13" pan (or a shallow flowerpot if you prefer). Then mix the dates and water together and cook till mushy. Add the marshmallows and stir till melted. Add the nuts and pour the entire mixture over the cookie crumbs. Whip the cream (do not add sugar) and spread it over the date mixture in the pan. Sprinkle the remaining cookie crumbs on top and refrigerate overnight. Serve plain or with ice cream. Can be frozen. Serves 12 to 15.
Cherry Cheese Pie If you ever make this pie, you'll never need or want the "regular" cheese cake, which is often dry or crumbly or pasty and sticks to the roof your mouth. Not only is my cherry cheese pie smooth, creamy and simply delicious, it's deliciously simple. Four ingredients plus a graham cracker crust from the store! I like to make my own graham cracker crust in a glass pie plate. Otherwise people think I bought the whole thing, not just the crust in that aluminum tin. If I'm going to make some-thing from scratch, I want credit for it. Oops, I've got to give my mother credit for making it first for us and passing it on!
One 8-oz. pkg. cream cheese One-half cup sugar. Two cups thawed Cool Whip One can pie filling
Mix the cream cheese and sugar together well. Add the Cool Whip. Pour into a graham cracker crust. Top with your favorite can of pie filling. (Actually, a whole can is too much for one pie and not enough for two pies. What a problem!)
Crunchy Pea Salad Why do all my favorite recipes come from my mother? Guess Mom is the person who has fed me the most these many years of my life. Thanks, Mom.
1 pkg. 16 oz. frozen peas 1 cup chopped cauliflower 1 cup diced celery 1 cup slivered almonds ¼ cup sliced green onions 1 cup Ranch Salad Dressing ½ cup sour cream ½ tsp. dill weed ¼ tsp. salt ¼ tsp. pepper
That's it, folks. Throw it all together.
Impossible Pie I don't like the word "impossible." It really doesn't exist in my vocabulary, except for this recipe from Mom.
1 cup coconut ½ cup Bisquick ¾ cup sugar 2 cups milk 3 eggs 1 tsp. vanilla
Blend all ingredients in a blender for 10 seconds. Bake at 350 for 45 minutes.
